Well, for me it depends on what I'm looking for at the time.
For just fun and hanging out and doing girly stuff? Probably Miaka from FY or Hikaru from MKR, because they're both a lot like me and I think we'd get along smashingly. Winry from FMA, Sakura from Tsubasa and Lirin from Saiyuki are up there as well.
As far as "friends-with-benefits" go, probably Howl. I don't think I could handle dating him, but it'd be nice to have someone that hot to *ahem* mess around with.
Same with Fye from Tsubasa and Gojyo from Saiyuki.
Relationship-wise... hmm. I'd say Tamahome because he's basically the all-around perfect guy, but he and Miaka belong together so I wouldn't want to break that up. Instead, I think I'll pick Shuda from Rave. Sure, he may be a bit gruff and not a people person, but he's brave as hell and if he cares about you, he'll fight to the death to defend you. He's really a sweet guy at heart under the tough-guy exterior.
